Lay a turkey slice flat on a cutting board.
Top with a cucumber ribbon, a spoonful of mashed avocado or avocado slices, and a few fresh herbs.
Add any optional veggies or a light drizzle of olive oil.
Roll tightly from one end to the other and secure with a toothpick if needed.
Repeat until all ingredients are used.
Serve chilled or pack in a container for an on-the-go meal or snack.
