Turkey Cucumber Roll-Ups

Ingredients

  • 6 –8 slices of nitrate-free turkey breast
  • 1 cucumber sliced lengthwise into thin ribbons using a vegetable peeler or mandoline
  • 1/2 avocado mashed or sliced thin (optional)
  • Handful of fresh herbs: dill parsley, or basil
  • Optional: bell pepper strips microgreens, or a drizzle of olive oil
  • Sea salt and black pepper to taste
  • Toothpicks to secure, if needed

Instructions

  • Lay a turkey slice flat on a cutting board.
  • Top with a cucumber ribbon, a spoonful of mashed avocado or avocado slices, and a few fresh herbs.
  • Add any optional veggies or a light drizzle of olive oil.
  • Roll tightly from one end to the other and secure with a toothpick if needed.
  • Repeat until all ingredients are used.
  • Serve chilled or pack in a container for an on-the-go meal or snack.
