Mini Turkey & Spinach Bites

Ingredients

  • 1 lb ground turkey organic or pasture-raised if possible
  • 1 cup finely chopped fresh spinach
  • 1 egg or flax egg for egg-free version
  • ¼ cup almond flour or coconut flour for a nut-free option
  • 2 cloves garlic minced
  • 2 tbsp chopped fresh parsley or cilantro
  • 1 tsp dried oregano or thyme
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • Optional: ½ tsp turmeric or cumin for added anti-inflammatory benefits

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine all ingredients and mix well until evenly incorporated.
  • Roll the mixture into small balls or press into mini muffin tins for easy portions.
  • Bake for 18–20 minutes, or until golden brown and cooked through.
  • Let cool slightly before serving. Store extras in the fridge for up to 4 days or freeze for longer storage.
