Mini Turkey & Spinach Bites

- 1 lb ground turkey organic or pasture-raised if possible
- 1 cup finely chopped fresh spinach
- 1 egg or flax egg for egg-free version
- ¼ cup almond flour or coconut flour for a nut-free option
- 2 cloves garlic minced
- 2 tbsp chopped fresh parsley or cilantro
- 1 tsp dried oregano or thyme
- ½ tsp sea salt
- ¼ tsp black pepper
- Optional: ½ tsp turmeric or cumin for added anti-inflammatory benefits
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, combine all ingredients and mix well until evenly incorporated.
Roll the mixture into small balls or press into mini muffin tins for easy portions.
Bake for 18–20 minutes, or until golden brown and cooked through.
Let cool slightly before serving. Store extras in the fridge for up to 4 days or freeze for longer storage.
