Coconut Yogurt Parfait with Berries

Ingredients

  • 1 cup unsweetened coconut yogurt
  • 1/2 cup mixed fresh berries blueberries, strawberries, raspberries, or blackberries
  • 1 tbsp chia seeds or ground flaxseeds optional
  • 2 tbsp coconut flakes or tigernut granola optional topping
  • 1 tsp raw honey or maple syrup optional
  • Sprinkle of cinnamon optional, for extra anti-inflammatory benefits

Instructions

  • In a glass or bowl, add a layer of coconut yogurt.
  • Spoon in a layer of berries.
  • Add a sprinkle of chia seeds or flaxseeds, if using.
  • Repeat with another layer of yogurt and berries.
  • Top with coconut flakes or granola and a light drizzle of honey or maple syrup.
  • Enjoy immediately or refrigerate for up to 24 hours.
