Baked Carrot Fries with Garlic Aioli

Ingredients

For the fries:

  • 4 large carrots peeled and cut into thin fry-shaped strips
  • tbsp avocado oil or melted coconut oil
  • ½ tsp garlic powder
  • ½ tsp paprika or turmeric optional
  • ¼ tsp sea salt
  • Freshly ground black pepper to taste

For the garlic aioli:

  • ¼ cup avocado oil mayo or homemade olive oil mayo
  • 1 garlic clove finely minced or grated
  • 1 tsp lemon juice
  • Pinch of sea salt
  • Optional: ½ tsp Dijon mustard or turmeric for extra depth and benefits

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, toss carrot fries with avocado oil, garlic powder, salt, pepper, and optional spices.
  • Spread the carrots in a single layer on the baking sheet. For crispier fries, avoid overcrowding.
  • Bake for 20–25 minutes, flipping halfway through, until the edges are browned and crisp.
  • While the fries are baking, mix the aioli ingredients in a small bowl until smooth and well combined.
  • Serve the carrot fries hot with a side of garlic aioli for dipping.
